Muffins (マフィン)


1/2 cup unsalted butter
1 1/4 cups white sugar (I used only 1c)
1/2 teaspoon salt
2 eggs
2 cups all-purpose flour, divided
2 teaspoons baking powder
1/2 cup buttermilk (I used 1/4 sour cream & 1/4 milk)
1 pint fresh blueberries - rinsed, drained and patted dry (I used cranberries)
2 tablespoons white sugar

Directions

Position rack in the middle of oven. Preheat oven to 375 degrees F (190 degrees C). Spray the top of a muffin pan with non-stick coating, and line with paper liners.

In a large bowl, cream together the butter, 1 1/4 cups sugar and salt until light and fluffy.
Beat in the eggs one at a time.

Mix together 1 3/4 cup of the flour and baking powder.

Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated.

Crush 1/4 of the blueberries, and stir into the batter.

Mix the rest of the whole blueberries with the remaining 1/4 cup of the flour, and fold into the batter.

Scoop into muffin cups.
Sprinkle tops lightly with sugar. (optional)

Bake in preheated oven for 30 minutes, or until golden brown, and tops spring back when lightly tapped.

Pumpkin Bread (パンプキンブレッド)

2 cups flour
1 cup brown sugar
1 Tbsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp nutmeg
1/8 grpind ginger or cloves
1 cup canned pumpkin
1/2 cup milk
2 eggs
1/3 cup shortening
1/2 cup chopped walnuts
1/2 cup raisins

Bake 60 min at 350 F.

Strawberry French Toast Casserole

1 loaf French bread (16 oz)
8 oz cream cheese
1/2 cup butter
1/4 cup maple syrup
10 eggs
2 cups milk
Pinch salt
1 1/2 cups strawberries (and more)
1/2 cup sugar

Cut bread in cubes.
Place cream cheese, butter and syrup in a bowl and microwave till they blend.
Add bread cubes and coat.
Place bread cubes in 9x13 pan.
In the same bowl, mix eggs, milk and salt. Pour over the bread cubes. Cover and let set in refrigerator for 1hour.
In a bowl, mash strawberries and sugar. Pour over bread cubes.
Bake, uncovered, at 350 F for 35-45 min.

Oven French Toast With Nut Topping

1 Loaf French bread (16 oz)
8 eggs
2 cups milk
2 tsp vanilla
2 cups half and half
1/2 tsp nutmeg
1/2 tsp cinnamon
3/4 cup butter, softened
1 1/3 cups brown sugar
3 Tbsp maple syrup
1 1/3 cups chopped pecans

Butter 9x13 pan.
Slice bread in 1" thick and lay on bottom of pan. Set aside.
Mix eggs, milk, half & half, vanilla, nutmeg and cinnamon. Pour over bread.
Refrigerate over night.
Mix butter, brown sugar, maple syrup and pecans in a bowl. Spread over the bread.
Bake at 350 F for 50 min.

Dutch Baby

1 cup whole milk
4 large eggs
2 tsp vanilla
1/4 tsp salt
1 cup flour
1/2 orange marmalade
1/4 cup dried cranberries
2 Tbsp butter
1 Tbsp sugar

Whisk milk, eggs, vanilla and salt in a bowl.
Whisk in flour untill smooth.
Bring marmalade, cranberries and 1/4 cup water to a simmer to a light syrup consistency. Cover and keep warm.
Heat butter in 10 inch skillet, untill light golden brown.
Pour milk mixture into skillet.
Place the skillet in the oven and bake at 435 F for 15-17 min.
Sprinkle with sugar and turn oven to broil.
Broil till berry puffy and golden brown.
Drizzle with the cranberry-orange sauce

1 tsp. salt
1 cup Parmesan cheese
3 Eggs
1 cup Milk, 2%
1 cup Corn oil

350 F for 18 minutes
Makes 30

Whole Wheat Pizza Dough

1/2 C. Water
1 tsp. Yeast
1.5 Tbsp. Honey
1/2 tsp. Salt
1.5 C. Wheat Flour
1 tsp. Cornmeal

Sprouted Whole Wheat Bread

1 1/4 cup water
1 Tbsp yeast
*mix and let it bubble
1/4 cup oil
1/4 cup honey
1 1/2 tsp salt
1 cup sprouted grain (170g)
2 cups whole wheat flour (300g)
*mix with the yeast water and rise for 60min.
1/2 cup whole wheat flour
*knead it in. 2nd rise. punch, shape and last rise in a pan. Bake at 375F for 35 - 40 min.

コーンブレッド Corn Bread

1 cup milk (250cc)
1/3 cup olive oil (5 Tbsp)
1 egg
1/2 tsp salt
2 tsp baking powder
1/3 cup sugar (2 Tbsp)
1 1/4 cup cornmeal (200g)
1/2 cup flour (80g)
*350F for 40min.

1 cup milk
1 egg
1/2 cup olive oil
1/2 tsp vanilla
1/2 tsp salt
1 cup raisins
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp baking soda
1/4 tsp baking powder
1/2 cup sugar
1 1/2 cups flour
nuts - optional
*325F for 60min.
