Whole Wheat Bread

  • 1 to 1 1/8 cups lukewarm water*
  • 1/4 cup vegetable oil
  • 1/4 cup honey, molasses, or maple syrup
  • 3 1/2 cups King Arthur Premium 100% Whole Wheat Flour, White Whole Wheat Flour, or Organic White Whole Wheat Flour
  • 2 1/2 teaspoons instant yeast, or 1 packet active dry yeast dissolved in 2 tablespoons of the water in the recipe
  • 1/4 cup Baker's Special Dry Milk or nonfat dried milk
  • 1 1/4 teaspoons salt
  • *Use the greater amount in winter or in a dry climate; the lesser amount in summer or a humid climate.

Easy Dinner Rolls

1 cup flour
1 tsp baking powder
1 tsp salt
1/2 cup milk
2 Tbsp mayo

Mix all the ingredients and spoon in a muffin pan.
Bake for 15 minutes on 350F.

Pecan Apple Bread



Ingredients
1 c brown sugar
1 c sour cream
2 eggs
2 tsp vanilla
2 c flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 c peeled and finely diced granny smith apples
1 c chopped pecans
DRIZZLE
1/4 c brown sugar
1/4 c butter

350℉ for 50 - 60 min.

Pretzel Buns



Ingredients:
1 pkg active dry yeast
2 tsp sugar
4 1/2 c all purpose flour
4 Tbsp butter
1 1/2 c warm water
2 tsp salt
1/4 c baking soda for water bath
8 c boiling water
1 medium egg, beaten with 1 teaspoon water
1 Tbsp coarse salt for tops of buns

How to Make:
In a large mixing bowl, add your warm water and yeast, allow to set for 5 minutes. Mix together your flour, sugar, salt. Add the melted butter and your flour mixture and mix with the dough hook for about 3 minutes to form a soft dough. If it seems to dry add a tablespoon more water. Put your dough in a well greased bowl and cover with a towel, set in a warm place to rise. I put mine in my oven with the light on. Takes about 1 hour to double in size. Remove from bowl and punch down, knead a couple of minutes.
Cut your dough in half, then in half again and again, you should now have eight equal pieces. Roll into balls then place on the counter and with an open palm push down and roll out to the size and shape of buns. Place these onto a bookie sheet lined with greased parchment paper. Allow to rise 30 minutes.
About 10 minutes before the dough is finished rising pre- heat your oven to 425 degrees. Bring 8 cups of water to a boil, now slowly add the baking soda. Be carefully this can foam up and run over if you add it all at once.
Take 2 buns at a time and place them in the boiling water, boil for 30 seconds, turn over and boil 30 more seconds. Remove from water and place back onto your baking sheet, repeat with the rest of the buns. Using a sharp knife cut an X across the tops.
Brush each roll throughly with the egg wash, sprinkle tops with salt.
Bake for 15 to 20 minutes, or until the tops are very brown.
Remove from pan to cooling racks as soon as they come out of the oven
These buns freeze well if you don't need them right away.

Pizza Hut Cheese Bread


Ingredients
1½ cups warm water (about 105°F)
1 (1/4 oz) packet active dry yeast
2 tbsp sugar
½ tsp salt
½ cup non-fat dry milk
3 cups flour
½ cup melted butter (half for the bottom of the pan and half on top of the breadsticks)
8 oz package of mozzarella cheese, shredded
Sprinkle with garlic powder, Parmesan cheese, salt & pepper (to taste)
Instructions
In the bowl of a KitchenAid type mixer fitted with the dough hook attachment, dissolve yeast in the warm water. Let sit for 5 minutes.
Add sugar, milk and salt then mix just until combined.
Add flour, one cup at a time and knead the dough until smooth. About 5 minutes.
Turn the dough out onto a well floured surface.
Knead the dough a few more times and incorporate a little more flour. Dough will be silky and smooth.
Roll the dough into the size and shape of your baking pan (I use a half sheet pan which is about 13×18).
Spread half of the butter onto the bottom of the pan and then place the dough into the pan. Let raise in warm, draft-free place for 15 minutes.
Spread remaining butter on the top of the dough.
Top dough with toppings or leave it plain.
Bake at 350°F for 20-25 or until golden brown.
Cut into breadsticks and serve with marinara sauce.

Pretzel Bites



Ingredients:
Nonstick cooking spray
Flour
1 (13.8 ounce) can refrigerated pizza crust
5 cups water
1/3 cup baking soda
1 egg, slightly beaten
2 teaspoons coarse kosher salt
1 (10 ounce) jar queso dip, heated

Directions:
Heat oven to 450 degrees. Spray baking sheet with nonstick cooking spray. Unroll dough on a lightly floured surface. Cut the dough into 3 x 1/2 inch strips. Using your hands, roll each strip into a rope about 5 inches long. Tie each strip into a knot and place on the baking sheet.
In a large sauce pan, heat 5 cups of water and the baking soda until it boils. Drop dough knots, 6 at a time, into the boiling water. Let the knots cook for about 30 seconds or until dough looks slightly puffy and dimpled. Using a slotted spoon, remove knots from the water and place on the cookie sheet about 1/2 inch apart. Brush knots with egg and sprinkle on salt.
Bake 10 to 12 minutes or until well browned. Serve pretzel bites with warm queso dip or any dip you prefer.

Apple Raisin Cobblestone Muffins (Panera Copycat)



Ingredients

For the Dough:
4 eggs
1 cup granulated sugar
1 tsp kosher salt
2 cup skim milk, warmed
4 oz butter, melted
7 cup flour, divided
2 pkg (0.25oz each) quick rise yeast

For the Coating:
3/4 cup butter, melted
1 cup brown sugar
1 cup granulated sugar
1/4 cup cinnamon
For the Filling:
2 apples, cored and diced (I leave skin on)
1/2 cup raisins
1/2 cup golden raisins

For the Icing:
1 cup powdered sugar
2 Tbsp milk

Instructions

In large mixing bowl, mix together yeast with warmed milk.
Add in the eggs, sugar and salt.
Continue to mix in the melted butter and 3 cups flour.
Add remaining flour until combined, trying not to over mix.

Turn dough out into a greased bowl, cover and let rise until doubled in size.

Line large muffin cups with liners or parchment paper.

Put melted butter in one bowl, and combine brown sugar, sugar and cinnamon in a separate bowl.

Pinch off 2 Tbsp sized balls of dough, roll into a ball.
Drop dough into melted butter, then into cinnamon sugar mixture.
Place in bottom of muffin cup.
Repeat until you have 3 balls in bottom of each cup.

In small bowl, mix together raisins with apples.
Place a tablespoon of filling onto dough balls.
Repeat making dough balls by adding 4 balls to the top of each muffin.
Again, sprinkle with 1 Tbsp of raisin/apple filling.

When all muffins are ready, bake in a 350 degree oven for about 25 minutes.
Remove and allow to cool.
In small bowl, whisk together powdered sugar and milk.
Drizzle over muffins and enjoy!

Apple Cinnamon Donut Muffins



Ingredients:
~Muffins~
4 T. butter, softened
2 T. vegetable oil
1/2 c. granulated sugar
1/4 c. brown sugar, packed
2 large eggs
1 tsp. vanilla extract
1 ½ teaspoons baking powder
1/4 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground allspice
3/4 tsp. salt
2 ½ c. all-purpose flour
3/4 c. + 2 T. milk
2 T. non-fat Greek yogurt
1 c. diced apple (about 1 medium apple peeled, cored, and in small dice)
~Topping~
2 T. butter, melted
1/4 c. cinnamon sugar (1 T. ground cinnamon mixed with 3 T. granulated sugar)

Directions:
Preheat the oven to 425°F. Lightly grease 36-cups in mini muffin tins.

In the bowl of a stand mixer fitted with a paddle attachment, beat together butter, oil, and sugars until well-combined.

Stir in the eggs and vanilla until combined.

Add baking powder, baking soda, cinnamon, nutmeg, allspice, and salt; stir to combine.

Add the flour; stir until just barely combined.

Stir in milk and yogurt until well-combined.

Add apple, and stir until just combined.

Scoop batter into prepared pans, filling 3/4 full.

Bake for about 12 minutes, or until toothpick inserted in center comes out clean.

Let the muffins cool in pan for about 5 minutes or until they’re cool enough to handle.

To top the muffins, dip in melted butter, letting excess run off.
Dip in cinnamon/sugar mixture.

Serve warm.
